Tan y Griddle was born from a cast-iron griddle, a family recipe and a deep love of Wales's most cherished bake. Fifteen years on, not much has changed — and that is exactly the point.
Our Welsh cakes are made from scratch every morning in our Carmarthen kitchen, using locally sourced butter from a Carmarthenshire dairy we have worked with since the very beginning. We use stone-ground flour, free-range eggs and only the finest dried fruits and spices — no preservatives, no shortcuts, no compromise.
You can find us every Saturday at Carmarthen Market, and every Wednesday at the smaller producer market near the town centre. We also fulfil online orders throughout the week, dispatching fresh-baked cakes in our signature boxes with overnight delivery to anywhere in the United Kingdom.

The original Welsh cake, just as it has always been. Plump currants folded into buttery dough, griddled to a golden crisp and dusted with fine caster sugar. This is the one that started it all.
A rich twist on tradition. Dark chocolate chips are folded through the dough before griddling, giving a deep cocoa flavour that pairs beautifully with the buttery crumb. A particular favourite with children and grown-ups alike.
A generously loaded blend of raisins, sultanas and glacé cherries, lightly spiced with a touch of mixed spice. Slightly sweeter than the classic currant, with a satisfying chew from the abundance of fruit.
Fresh lemon zest brightens the dough, balanced by plump golden sultanas. Finished with a fine dusting of lemon sugar, these are light, fragrant and utterly moreish — perfect with a pot of Earl Grey.
Ground cinnamon and a pinch of warming nutmeg give these Welsh cakes an irresistible autumnal depth. Plump Californian raisins add bursts of natural sweetness throughout the tender, golden dough.
Each month we create a limited flavour inspired by the season. Past specials have included elderflower and gooseberry in summer, stem ginger and orange at Christmas, and rhubarb and custard in spring. Ask us what is on this month.

Order Your FavouritesThe Old-Fashioned Way
We do not use ovens, proving drawers or blast chillers. Just a well-seasoned cast-iron griddle, a steady hand and the same method used in Welsh kitchens for centuries.
Each morning the dough is prepared fresh. Butter is rubbed into flour by hand until it resembles fine breadcrumbs, then sugar, eggs and fruit are folded through gently.
The dough is rolled to an even thickness of just over a centimetre, then cut into rounds using the traditional fluted cutter passed down from the founder's grandmother.
The cakes go straight onto the dry cast-iron griddle over a steady heat. Each one is turned once and only once, when the edges show the first blush of colour. Timing is everything.
Fresh off the griddle, each cake is set to cool briefly before being dusted with fine caster sugar. They are never iced, never glazed — just themselves, as they should be.
Online orders are packed in our sturdy kraft boxes with tissue, a handwritten note and a freshness card. Dispatched same-day with an overnight courier to anywhere in the UK.

Everyone Is Welcome at the Table
We believe everyone deserves a proper Welsh cake. Our gluten-free range uses a carefully developed blend of rice flour and ground almonds in place of wheat flour, giving a texture that is genuinely indistinguishable from the original.
Our gluten-free cakes are prepared in a dedicated area of our kitchen using separate equipment, and ingredients are stored and handled to minimise cross-contamination risk. Please note: our kitchen does handle wheat flour, so we cannot guarantee a completely allergen-free environment. If you have a severe allergy, please speak to us before ordering.
Gluten-free versions are available in all six of our core flavours, and are offered in exactly the same sizes, boxes and gift options as our standard range. There is no extra charge.

Gluten-Free Availability
The seasonal special flavour is available in gluten-free in most months but not all. Please contact us to confirm availability before ordering. All other flavours are in permanent stock and can be dispatched within 24 hours of your order.
Allergen Information
Our gluten-free cakes contain: eggs, milk (butter), nuts (ground almonds). They do not contain gluten-containing cereals. Produced in a kitchen that also handles wheat, barley and rye. Full ingredient lists are available on request.

There is nothing quite like buying your Welsh cakes warm from the griddle. Come and find us at Carmarthen Market and smell them baking before you have even spotted the stall.
We have traded at Carmarthen Market every Saturday for more than a decade. It is where we started, and it remains the heart of what we do. On a good market morning we bake continuously from opening time to sell-out — so arriving early is always a wise move, particularly for the seasonal special and the dark chocolate.
We also trade at the smaller Wednesday producer market, which is a more relaxed affair with fewer stalls and a neighbourhood feel. Cash and card payments are both welcome at all our market appearances.

Good to Know Before You Visit
We accept cash and all major card payments at the market stall. We cannot take pre-orders for collection at the market — but we always have a good range of flavours available on the day.
On bank holidays and during the Christmas season, we often trade additional days. Follow us on social media for up-to-date stall schedules and to see what the seasonal special is each month.
The Saturday market can sell out of certain flavours by mid-morning, particularly in summer and around St David's Day.

No problem. Every flavour we sell at the market is available to order online with overnight delivery across the whole of the United Kingdom. Order by noon for same-day dispatch on weekdays.

Overnight tracked delivery to mainland UK addresses. Orders placed before noon are dispatched same day. Delivery charge £4.95. Free on orders over £35.
For time-sensitive orders such as birthdays and events, we offer a guaranteed next-day delivery service for an additional £3.50. Available Monday to Friday.

We deliver to all parts of the UK including the Scottish Highlands and Islands, though a small additional surcharge may apply. Please contact us for a specific delivery quote before ordering.
Welsh cakes keep well for up to five days in an airtight tin at room temperature, or up to three months in the freezer. Reheating gently in a dry frying pan for 90 seconds revives them beautifully. Full freshness guidance is included with every order.

Every order is baked fresh to your specification and dispatched the same day, straight from our Carmarthen kitchen to your door.

Common Questions
How long do Welsh cakes keep?
In an airtight tin at room temperature, our Welsh cakes keep well for four to five days. They also freeze beautifully for up to three months. Defrost at room temperature and warm briefly in a dry pan for the best result.
When will my order be dispatched?
Orders confirmed and paid by noon Monday to Friday are dispatched the same afternoon with an overnight courier. Orders placed on Friday afternoon will be dispatched on Monday morning, unless you contact us to arrange otherwise.
Are the gluten-free cakes made separately?
Yes. Gluten-free orders are prepared in a dedicated area of our kitchen using separate equipment. However, our kitchen does handle wheat flour daily, so we cannot guarantee a completely allergen-free environment for those with severe coeliac disease. Please contact us to discuss if this is a concern.
Can I specify a delivery date for a birthday or event?
Yes. Simply note your preferred delivery date in the special notes field when you order. We will do our best to match it. For guaranteed next-day delivery, there is a small additional charge of £3.50. We recommend ordering at least two days before your required date.
Do you do custom flavours for events?
For bulk and bespoke orders we can discuss custom flavour development. We need at least three weeks lead time to trial and approve a new flavour. There is a small development fee for entirely new recipes, but flavour variations within our existing range (such as a specific fruit or spice combination) can usually be accommodated more easily.
How do I pay for my order?
Once we confirm your order by email, we will send a secure card payment link or bank transfer details. We accept all major cards, Apple Pay and bank transfer. We do not accept payment via the order form itself and do not store any card details.
Do you deliver to Northern Ireland and the Channel Islands?
We deliver to all parts of the United Kingdom. Additional charges may apply for Northern Ireland, the Channel Islands and some Scottish island destinations. Please get in touch before ordering and we will confirm the exact delivery cost for your address.
What is the minimum order for bulk pricing?
Bulk pricing applies to orders of 120 cakes (10 dozen) or more. At this quantity we offer a 15% discount on the standard per-cake price. For orders of 30 dozen or more, pricing is negotiated individually. Please enquire at least two weeks before your required delivery date to allow for baking planning.
