A kitchen built on
the rhythms of the land

Nestled along Mansel Street in the heart of Carmarthen, The Warren began as a simple idea: to cook honestly, using what the season provides, and to share that food with people who care about where their meals come from. It was never meant to be a restaurant in the conventional sense. It was meant to be a table you wanted to sit at.

Over the years, that idea grew into something rare. A place where neighbours become friends over slow-cooked lamb, where the menu changes with the weather, and where the wine is poured generously because that is how hospitality should feel. The Warren is not about fine dining. It is about real dining, with real ingredients from real farms scattered across Carmarthenshire.

We do not serve food to impress. We serve food to nourish, to gather, to remember what eating together is supposed to feel like.

The name itself tells you everything. A warren is a network, a community, a place of shelter. Ours happens to have a wood-fired oven and the best sourdough in West Wales.

We cook what the land gives us

Every dish begins with a conversation with our growers, our fishermen, our foragers. The menu is never finished. It is always becoming.

i

Source

Every ingredient has a story. We know our farmers by name, our fishermen by boat, our foragers by the trails they walk.

ii

Prepare

Nothing leaves our kitchen that we have not tasted twice. We cook slowly, with patience, because good food cannot be rushed.

iii

Gather

The table is the centre of everything. We set it with care. We seat you with intention. The meal is only half the experience.

The Space

More than a venue.
A gathering place.

The Warren on Mansel Street is a space that breathes. Exposed brick walls meet rough-hewn timber. Candlelight flickers across long communal tables. It is intimate without being cramped, warm without being fussy.

We open for special events, seasonal suppers, and community gatherings. Each evening is curated, considered, and unlike the last. Follow us to know when the next door opens.

The Warren is the soul of Carmarthen dining. It is not always open, but when it is, you drop everything and go. There is nothing else like it in West Wales.
