From the far western tip of Wales, where the Atlantic meets ancient limestone cliffs, we craft small-batch gins using hand-foraged botanicals, wild coastal herbs, and the purest Pembrokeshire spring water. Every bottle tells a story of place.
St Davids is the smallest city in Britain, pressed against the Pembrokeshire coastline with its cathedral, its cliffs, and its extraordinary natural larder. It was here, in 2018, that we built our distillery. Not in a city, not in an industrial estate — in the land itself.
Our head distiller spent three years walking the coastal paths and inland meadows of Pembrokeshire, cataloguing wild plants, tasting hedgerow berries, and consulting with local farmers. The result is a botanical selection unlike any other in Wales — native, seasonal, and rooted in this specific piece of earth.
We use a traditional copper pot still, a small-batch approach that allows us to oversee every distillation personally, and Pembrokeshire spring water drawn from beneath the Preseli Hills. Our output is deliberately limited. We believe the best gin cannot be rushed, scaled, or compromised.
Seventeen botanicals form the backbone of our signature recipe. Six are wild-foraged directly from Pembrokeshire. The remainder are sourced from trusted Welsh and British growers wherever possible.
Plus angelica root, orris root, cassia bark, grains of paradise, lemon peel, bitter orange peel, and six further proprietorial botanicals.
Our flagship. Classic London Dry style with a distinctly Welsh character. Juniper-forward with a long, herbal finish and whisper of coastal brine.
Named for the ancient Preseli Hills. Elderflower and wild thyme at the fore, softened with orris root and a light citrus finish.
Sea buckthorn and bladderwrack harvested from St Brides Bay. Briny, mineral, and bracingly fresh — the ocean in a glass.
Rested for six months in ex-Welsh whisky casks. Rich, warming, and complex — our most contemplative expression. Numbered bottles, 400 per year.

Botanicals are gathered seasonally from Pembrokeshire or sourced from trusted British growers. Each batch is inspected before use.
Selected botanicals are macerated overnight in wheat-based spirit. This allows the essential oils to fully integrate before distillation begins.
We distil in our custom 200-litre copper pot still. The head distiller oversees every run, making careful cuts to produce only the finest heart.
The distillate is carefully reduced to bottle strength using Preseli spring water and allowed to rest, allowing integration and balance to develop.
Each bottle is hand-filled, sealed with wax, labelled by hand, and assigned a batch number. Every detail is attended to before it leaves our door.
We believe the best way to understand our gin is to watch it being made. Our distillery tours take you behind the copper stills, through the botanical store, and into the heart of the operation — ending, naturally, with a tasting.
Tours run throughout the week and are available to book online or by telephone. Private tours for groups of eight or more are available on request. All tours are conducted by our head distiller or a senior member of the team.
Tours depart Tuesday to Sunday at 11:00, 13:00, and 15:00. Duration varies by experience. Children aged 16 and under are welcome on the Standard Tour but may not participate in the tasting element. All participants must present valid ID confirming they are 18 or over before tasting. Bookings are recommended; walk-in availability is subject to capacity.

The distillery and its surrounding grounds offer an intimate, characterful venue for wedding ceremonies and receptions. With exposed stonework, copper stills as your backdrop, and the Pembrokeshire countryside beyond the windows, it is a setting that photographs beautifully and feels genuinely unique. We accommodate parties of up to 80 guests and work with you to create a bespoke gin experience for your celebration.

We are located on the outskirts of St Davids, the smallest city in Britain, within the Pembrokeshire Coast National Park. The drive from Haverfordwest takes approximately 25 minutes; from Cardiff, allow around three hours. We are well worth the journey.
