Saphan means "bridge" in Thai. And that is exactly what we are — a bridge between the vibrant street food culture of Thailand and the warmth of a community restaurant in Aberystwyth. We bring the real thing: the proper pastes, the fragrant herbs, the balance of sweet, sour, salty, and spice that makes Thai food extraordinary.

We are an independent restaurant, not a chain. Every sauce is made in-house. Every curry paste is prepared fresh. We source our produce locally where we can, and import specialist Thai ingredients directly to ensure nothing is compromised.

The name

Saphan (สะพาน) is the Thai word for bridge. It was chosen deliberately. Thai food has a way of connecting people who might otherwise never sit at the same table — across cultures, across backgrounds, across generations. A shared bowl of tom yum, a plate of pad thai passed between friends: this is what we are about.

We also wanted something honest. Not a word borrowed from a travel brochure, not a name designed to conjure something vaguely exotic. Just a word with genuine meaning.

The food

Thai cuisine is one of the world's great culinary traditions, and it thrives in the informal energy of markets, street corners, and open-air stalls. The food is bold, fragrant, generous, and never pretentious. That is the version we want to bring to Aberystwyth.

We import specialist Thai ingredients that cannot be replicated with substitutes: kaffir lime leaves, lemongrass, galangal, fish sauce, shrimp paste, and more. Where we can source quality local produce — vegetables, chicken, meat — we do.

Aberystwyth

We chose Aberystwyth because it is a town with a genuine appetite. A university town on the edge of the Irish Sea, with a population that travels, thinks, and eats with curiosity. We felt that kind of audience would appreciate something authentic — not a toned-down approximation of Thai food, but the real thing.

West Wales has a growing food culture, and independent restaurants are at its heart. We are proud to be part of that. When you eat at Saphan, your money stays local, your feedback shapes what we do, and your support keeps a small kitchen running.

The team

Saphan is a family-run restaurant. There is no head office, no standardised recipe cards printed in a central depot, no brand guidelines from a marketing department. It is people who care about food, cooking it for people who come to eat it.

We have a small, committed team in the kitchen and front of house. We know our regulars. We remember what you like. That is not a marketing claim — it is just how a proper restaurant works.

The building blocks of Thai flavour

Authentic Thai cooking begins with ingredients you cannot fake. Here are six that define what we do.

Lemongrass
Fragrant and citrusy with a faint floral note, lemongrass is the aromatic backbone of Thai soups and curry pastes. We use it fresh, bruised, and sliced — never dried, never powdered.

Galangal
Related to ginger but more complex — sharper, earthier, with a distinctive pine-like quality. Essential in tom kha and most curry pastes. There is no acceptable substitute.

Kaffir Lime Leaves
Double leaves with an intensely floral lime fragrance. Added to curries, soups, and stir-fries, they are torn or sliced thin to release the oils. Impossible to replicate with any substitute.

Fish Sauce
The salt of Thai cooking. Fermented anchovies aged to produce a savoury, umami-rich liquid that adds depth without tasting "fishy". We use a premium brand imported from Thailand.

Thai Basil
Distinct from Italian basil — anise-scented with a slight peppery bite. Holy basil is used in pad kra pao; Thai sweet basil finishes curries. Both are added fresh at the very end of cooking to preserve their intensity.

Tamarind
A tart, fruity paste made from the pulp of tamarind pods. It provides the sour dimension in pad thai, massaman, and many dipping sauces — a rounder, more complex sourness than vinegar or lime alone.

Nothing sits under a heat lamp. Every takeaway order is cooked fresh when you call. That means a short wait, but it means the food is properly made.

We are collection only. Come in when your order is ready, pay, and head home. We will let you know an accurate time when you call.
