For over sixteen years, Ginger has held to that belief on the streets of Carmarthen, bringing the vibrant, complex flavours of India to the oldest town in Wales. This is the story of spice, family, and a community that became home.

A Kitchen Opens in Carmarthen

With recipes passed down through generations and a dream of sharing authentic Indian cuisine with West Wales, Ginger opened its doors for the first time. The town was curious. The aromas from the kitchen were irresistible. Word spread quickly along Lammas Street and King Street -- something special had arrived.

Chapter Three -- Finding Our Feet

The Regulars Arrive

Within two years, Ginger had become more than a restaurant. Friday nights filled with families celebrating the end of the week. Saturday evenings saw couples discovering new flavours. The kitchen expanded its repertoire, introducing regional specialities from Kerala, Punjab, and Bengal alongside the classics that had already won hearts.

Ten Years, Ten Thousand Meals

A decade of service brought milestone celebrations: loyal customers who had been dining since opening night, a second generation of families now bringing their own children, and a reputation that extended well beyond Carmarthenshire. The community had embraced Ginger as their own.
