Pembroke has always been a town that knows good food. Nestled beneath the imposing walls of one of Wales's greatest Norman castles, this medieval borough has welcomed travellers, traders, and those with discerning palates for nearly a thousand years. Today, that tradition continues in the most delightful and unexpected of forms: a pop-up cafe that has quickly become one of the most talked-about eating spots in all of Pembrokeshire.

The Gallows Cafe is not what you might expect from its name. There are no dark dungeons or grim historical reenactments here. Instead, what you will find is a bright, welcoming space filled with the aroma of freshly baked cakes, the gentle clink of teacups, and the kind of warmth that only comes from food made entirely by hand, from scratch, with locally sourced ingredients wherever possible.

Everything is homemade, from the pastry in our quiches to the sponge in our cakes. You can taste the difference when someone actually cares about what they are making.

What began as a pop-up venture has grown into something that the people of Pembroke now consider essential to their daily routine. Regulars arrive early for the breakfast offerings, linger over a mid-morning coffee and slice of cake, and return at lunch for one of the hearty savoury dishes that change with the seasons and the inspiration of the kitchen.

The menu is never static. That is part of the magic. One week you might find a rich Welsh rarebit made with a local ale and mature cheddar, the next a Mediterranean-inspired roasted vegetable tart with herbs from a garden just down the road. The cakes follow the same philosophy: seasonal, inventive, and always made that morning.

From Pop-Up to Pembroke Favourite

The Gallows Cafe started the way all good things do: with a simple idea and a lot of passion. What was initially conceived as a temporary pop-up venture quickly grew into something more permanent when the people of Pembroke made it abundantly clear they were not willing to let it go.

The name draws on Pembroke's rich and occasionally colourful history. This is a town that has seen everything from Norman conquest to Tudor dynasty, from medieval trading to modern tourism. The Gallows Cafe sits within this tapestry, a small but vibrant thread in a story that stretches back centuries.

But this is not a cafe that trades on novelty or gimmick. It endures because of what is on the plate and in the cup. Every morning, the kitchen comes alive with the sound of whisking, chopping, and the gentle hiss of butter meeting a hot pan. The cakes cool on wire racks while the savoury dishes take shape.

Pembroke is a tight-knit community, and The Gallows has become part of its fabric. It is where friends meet, where grandparents bring grandchildren for a slice of something sweet, where walkers refuel after a morning on the coastal path. It is, in the truest sense of the word, a community cafe.

Pembroke Castle, just a short walk away, was the birthplace of Henry VII in 1457. Today, visitors to the castle and the town discover something equally worthy of their time at The Gallows.
The cafe sources ingredients from Pembrokeshire wherever possible, supporting local farmers, dairies, and growers. From the flour in the cakes to the cheese in the rarebit, provenance matters here.
Pop-up does not mean temporary. It means flexible, responsive, and always evolving. The Gallows embraces this spirit, changing its menu with the seasons and the availability of the best local produce.

Nothing arrives pre-made or frozen. Every element of every dish is crafted in our kitchen that morning. You can taste the difference.

Seasonal

Our menu follows the rhythms of Pembrokeshire. When asparagus appears, it goes on the menu. When the blackberries ripen, they go into our crumbles.

Local First

We prioritise Pembrokeshire producers. The shorter the journey from farm to plate, the better the flavour and the lighter the footprint.

Welcoming

Whether you are a regular or a first-time visitor, a family with small children or a walker with a muddy dog, there is a seat and a smile for you here.

Signature Bake

Lemon Drizzle Cake

Intensely lemony, drenched in a sharp citrus syrup while still warm from the oven. The glaze crackles gently as you slice through it. Served in generous portions with a dusting of icing sugar.

Coffee and Walnut

Rich espresso-infused sponge with a coffee buttercream and toasted walnut pieces. Best enjoyed alongside one of our freshly ground coffees for the full experience.

Weekend Special

Bara Brith

The classic Welsh tea bread, made with tea-soaked dried fruit and a hint of mixed spice. We serve ours sliced thick with a generous spread of salted Welsh butter.

Seasonal

Apple and Blackberry Crumble Cake

A Pembrokeshire autumn in cake form. Bramley apples and foraged blackberries beneath a buttery oat crumble topping. Served warm when the weather calls for it.

Possibly the best homemade cake I have had in years. The quiche was fantastic too. A real hidden gem in Pembroke that more people need to know about. We will definitely be back on our next visit to Wales.

We know our regulars by name and by order. We know that Mrs Davies always wants her tea strong with just a splash of milk, and that the walking group from the coastal path will descend upon us at precisely eleven o'clock on a Tuesday morning, hungry and windswept and ready for cake.

This is what a community cafe should be. Not a chain, not a franchise, not a replicated formula. A real place, run by real people, serving real food to the people they live alongside. That is what The Gallows is, and that is what it will always be.

We are grateful to everyone who has supported us since our first day as a pop-up, and to everyone who continues to walk through our door. You are the reason we get up before dawn to bake.
